Marshmallow Shortcake

- 4
oz butter
- 1
egg
- 1
tsp baking powder

3/4 cup sugar
- 1
3/4 cups flour

Salt

- Step 1. Preheat oven to 180oC.
- Step 2. Cream butter and sugar until
smooth.
- Step 3. Add egg to butter and sugar mixture
and beat until mixed.
- Step 4. Add sifted dry ingredients and mix
until combined.
- Step 5. Bakes for 20 to 30 minutes
until golden on top.
- Step 6. When cool top with marshmallow
topping.

Marshmallow topping
|
- 1 cup sugar
- 1 dsp gelatine
- Red food colouring
|
- 1 cup hot water
- vanilla essense
- coconut
|
|
- Step 1. Dissolve gelatine in hot water, add
sugar and boil 3 to 5 minutes.
- Step 2. When cool but not set add vanilla
essense and a few drops of cochineal. Beat until thick.
- Step 3. Finish by sprinkling marshmallow
with coconut.
