Marshmallow Shortcake

4 oz butter
1 egg
1 tsp baking powder
3/4 cup sugar
1 3/4 cups flour
Salt
Step 1.    Preheat oven to 180oC.
Step 2.    Cream butter and sugar until smooth. 
Step 3.    Add egg to butter and sugar mixture and beat until mixed.
Step 4.    Add sifted dry ingredients and mix until combined.
Step 5.    Bakes  for 20 to 30 minutes until golden on top.
Step 6.    When cool top with marshmallow topping.
Marshmallow topping
1 cup sugar
1 dsp gelatine
Red food colouring
1 cup hot water
vanilla essense
coconut
Step 1.    Dissolve gelatine in hot water, add sugar and boil 3 to 5 minutes.
Step 2.    When cool but not set add vanilla essense and a few drops of cochineal. Beat until thick.
Step 3.    Finish by sprinkling marshmallow with coconut.
