- Lemon Slice

Ingredients (Base) |

125g / 4 oz butter |
1/2 tin condensed milk |
|
rind of 1 lemon |
100g / 3 oz coconut |
|
- 500g / 1/2 lb crushed plain biscuits
|

Method |
- Melt butter and condensed milk over a low heat. Add lemon rind,
biscuits and cocnut. Press into a greased shallow tin. Allow to
cool. When cold cover with the following topping.

1 tbs butter |
1 tsp condensed milk |
|
6 tbs icing sugar |
3 tsp lemon juice |
- 1/4 cup of coconut
|

Method |
- Sift the icing sugar and then add the lemon juice to it. In a saucepan, over a low heat, melt butter and condensed milk.
Add to the icing sugar mixture. Spread over cold lemon base and
sprinkle with coconut. Cut the slice into squares for serving.
