Sift flour, baking powder
and salt into a bowl. Set bowl a side.
In another bowl beat the egg
and sugar until thick and smooth. Now add the egg
mixture and milk to the flour mixture previously but a
side. Mix together well.
Lightly grease a heavy-based
frying pan with butter. You need a heavy-base pan so
that the heat is evenly distributed across the surface
of the pan. Heat the pan on a medium to high heat. When
pan is hot enough drop tablespoons of mixture into the
pan.
When bubbles appear on the
top surface of the pikelets and it appears slight dull,
turn pikelets over. You will need to keep a close eye on
them as they will all need turning one after the other.
The other side should take about a minute until it is
golden. Put a side until all pikelets are cooked.
To serve up: Re-warm
a plate, so that hot pikelets remain warm when serving.
They are lovely with just a light spread of butter or
top with jam or have them cold in the kids lunch boxes. |
