Here are some quick and tasty ideas for those lazy weekends. Get the kids helping you with these ones. It's a great way to get your kids cooking and so much fun!

Crunchy Chicken Nuggets 

Our children love chicken nuggets. Unfortunately, seeing the television programme where Jamie Oliver showed us how the nuggets were made, put us off them. When I came across this recipe I was relieved, chicken nuggets were back on the menu again!

 

1 egg                                          

2 tablespoons milk     

3 cups cornflakes, finely crushed

500g boneless chicken breast, cut into bite-sized pieces

 

Whisk egg and milk together in a small bowl; set aside. Place cornflake crumbs in a large zip-lock bag. Dip each chicken piece in the egg and milk mixture and then let the kids shake the pieces in the cornflake-crumb bag.

Place baking paper on the oven tray. As each nugget is coated, place on oven tray. Bake at 200°C for 15 minutes or until chicken is cooked.

Serve with your favourite dipping sauce.


Mini Spaghetti Pies

12 slices sandwich bread

50g melted butter

1 can spaghetti

1 cup grated cheese

2-3 chopped rashers bacon (optional)

 

Trim the crusts from the bread. Brush one side of each slice with a little melted butter. Push the slices, buttered side down, into 12 large muffin tins. Bake at 180ºC for 15 minutes until crispy.

(At this stage the cases can be cooled and kept in an airtight container.)

Fill the cases evenly with a spoonful of spaghetti. Top each with equal quantities of grated cheese and chopped bacon. Bake at 180ºC for 15 minutes until the cheese has melted and the bacon is crispy.

Cool slightly before serving.


Tasty Spaghetti and Cheese Pinwheels

Scone Base

 

6 tsp baking powder 

50g butter

1 cup milk

3 cups flour 

 ½ tsp salt

 
   

Topping

 

1 tin spaghetti 

100g ham, roughly chopped

1 cup grated cheese  

 1 small onion, finely chopped

 

Sift flour, salt and baking powder into a bowl. Cut in the butter. Rub together with your fingers until mixture resembles fine crumbs.

Make a well in the centre. Pour in the milk and stir with a knife to form a soft dough. Turn out on to a floured board and knead lightly. Roll out into a rectangle 40cm long x 25cm wide.

Spread spaghetti over 2/3 of the rectangle leaving 1/3 empty on the long side. Scatter the 2/3 evenly with the ham, onion and 3/4 cup cheese. Carefully roll the dough from the long edge and cut into 10 even pieces. Place the cut rounds close together on a baking paper-lined oven tray.

Sprinkle with remaining cheese. Bake at 220°C for 20 minutes or until golden and cooked in the centre.

Serve warm.
