Microwaves are a great alternative to conventional ovens. Below are some great recipes to try using your microwave.

Peanut Butter Squares

100g butter

1cup biscuit crumbs

1 cup icing sugar

 ½ cup peanut butter

6 drops almond essence

¼ t vanilla essence

½  cup chocolate morsels

2t butter
 

 

Cut 100g butter into cubes and place into large microwave bowl. Add the peanut butter and cook in microwave on high for 2 minutes. Mix well.

Add biscuit crumbs, icing sugar and almond essence to peanut butter mixture and mix well.

Press into loaf pan lined with baking paper. In another dish add chocolate and 2t butter. Melt for 1 - 2 minutes until the two can be mixed together smoothly. Add vanilla essence. Spread on top of peanut butter mixture.

When cool cut into small squares.
 


Chicken Fricassee

4 small onions

200g carrots

1cup sliced celery    

50g butter

¾  cup water

2T flour

1t green herb stock granules

1 cup milk

½ cup peas

2 cups smoked chicken or cooked chicken

 

 

Thinly slice carrots and place in casserole dish. Add celery, quartered onions, butter and ¼ cup water.
Cover and cook on high for 8 minutes until vegetables are tender. Stir in flour and stock granules. Add milk and remaining ½ cup water.

Cook uncovered, stirring every minute, until sauce boils and thickens. Add chicken and peas. Cook for 2 minutes. Serve with either rice or mashed potato.

 

Rice (4 servings)

1 cup rice

2t oil

½  t salt

2 ¼  cups boiling water

 

Place rice in deep 2-litre casserole dish, add oil and salt and pour over boiling water.

Cover and cook on high for 12 minutes (check every few minutes in case of boil over). Stand for 5 minutes. Toss with a fork.

 

Mashed Potato (4 servings)

4 medium-sized potatoes

¼  cup water

1T butter

milk

salt & pepper

     
 

Select a bowl in which potatoes can be cooked in the microwave, mashed and then served. This will save time on the washing up later in the evening.

Half fill bowl with cold water, peel potatoes and halve each lengthwise. Cut each half into 4 -6 fairly even square pieces. When all potatoes are prepared drain off water.

Add butter and ¼ cup water to potatoes. Cover and cook on high for 7 - 10 minutes. Shake after 4 minutes to coat with melted butter. Test with sharp knife, removing potatoes as soon as tender.

Leave to stand for 4 minutes. Add milk, salt & pepper to taste and mash.

 

Stewed Apple and Custard

1 apple per person (peeled, cored and sliced into approximately 16 pieces)

 

4T water

 

1t sugar

 

Place apple pieces in flat microwave dish. Add water and sugar and cook for 3 minutes on high.

Drain off any excess water. Place pieces in bowl or alternatively mash with potato masher.

 

Custard

2 cups milk

2T custard powder

1T sugar

 

Pour 1 ¾ cups milk into large microwave jug, add 1T sugar. Heat on high for 2 minutes.

Combine 2T custard powder with remaining ¼ cup of milk, slowly add to hot milk stirring constantly. Cook on high for 3 - 4 minutes, stirring after each minute until desired consistency is reached.

Pour over apple and serve.
