2T cocoa |

150g chocolate chips |

100g packet Betta Mallow Bakes
Mini Marshmellows |

Extra coconut for rolling |
Combine cocoa, coconut, icing sugar
and chocolate chips in large bowl.
Melt butter and add to dry
ingredients. Add mallow bakes and a drop of
vanilla essence. Mix all ingredients thoroughly.
Roll into small balls. Roll in
extra coconut. Set in fridge.

2 cups macaroni |
225g crushed pineapple in
natural juice |

3 cups boiling water |
¼t mixed herbs |
|
1 cup bacon (diced) |
¼t dry parsley |

1t onion stock
|

Sauce |
|
|
1T
butter |
1½T flour (approx) |
|
1 cup milk |
1 cup grated cheese |
Place macaroni in microwave-safe
casserole dish. Pour over boiling water. Add herbs, parsley,
onion stock and bacon. Cook on High for 10 minutes.
Add pineapple, reserving the juice.
Cook for a further 5 minutes. Put to one side.
Sauce
Place butter in large microwave jug
and melt. Add sufficient flour to form thick paste.
Gradually
add pineapple juice, stirring constantly. Add milk, still
stirring. Cook for 2 minutes on High. Stir well. Cook until
thick, stirring at minute intervals. Add grated cheese and stir
well. Combine sauce and macaroni. Cook a further 2 minutes.

1 cup flour |
1 cup sugar |

1t baking powder |
2 eggs |
|
1t baking soda |
½ cup oil |
|
1t ground cinnamon |
2½ cups grated carrot |
Grate the carrot.
Put flour, baking
powder, baking soda, sugar and cinnamon into a bowl.
Beat eggs and oil
together.
Add egg mixture and
grated carrot to dry ingredients. Stir well to combine.
Pour mixture into a
20cm ring tin. Leave to stand for 5 minutes.
Bake at 180°C
for 35-40 minutes or until cake springs back when lightly touched.
Leave in tin for 10
minutes and then turn onto cooling rack.
Ice with cream cheese

Cream Cheese Icing

50g butter |
150g cream cheese |
|
1 cup icing sugar |
¼t
vanilla essence |
Place butter, cream cheese, vanilla
and icing sugar into the bowl of the food processor. Process
until smooth – alternatively, beat with a wooden spoon.
