quick and tasty ideas for February
SAVOURY MINCE
2T
oil
1 tin spaghetti
1
onion
1 tin crushed pineapple
500g
mince
1 tin diced tomato
¾ cup
mixed vegetables 1 tin corn kernels
Heat 2T
oil and fry onion until transparent.
Add mince
and cook until brown.
Add
remaining ingredients.
Heat
through and serve with rice.
1½ cups
flour ½ cup brown sugar
2t baking
powder 1 banana (mashed)
½ cup
choc chips 90g melted butter
1 egg
lightly beaten 1/2
cup milk
Mix
flour, baking powder, brown sugar and chocolate chips in a bowl.
In a
separate bowl combine mashed banana, egg, milk and butter.
Pour
liquid ingredients into the flour and stir with a wooden spoon until
just combined.
Spoon
into greased muffin tin and bake for
15 minutes at 180°C.
200g
butter ¼ cup golden syrup
½ cup
sultanas 1¼ cups flour
1t baking
powder 1 cup coconut
½ cup
sugar 1¼ cup crushed cornflakes
Melt
butter and golden syrup in a large saucepan. Remove from heat.
Sift in flour and baking powder.
Add
sultanas, coconut, sugar and cornflakes. Mix well.
Press
mixture into a greased 20 x 30cm sponge roll tin.
Bake at
180°C
for 20 minutes.
When
cold, cover with lemon icing and cut into squares.
Lemon
Icing
2 cups
icing sugar 2t grated lemon rind
1t
butter Approx 2T lemon juice
Sift
icing sugar into a bowl. Stir in lemon rind and butter. Add lemon
juice slowly, mixing into a smooth, spreadable icing. |
