Chicken in Coke                        Lasagne                                      EASY PAVLOVA


CHICKEN IN COKE (Similar to KFC)

2.5kg chicken pieces                               2 eggs             

1 Packet of Coat and cook                       Approx 1 cup Coca-cola

Remove skin from chicken pieces.

Break egg into container big enough to hold one piece of chicken and lightly beat.

Pour enough coat and cook into similar container to cover the bottom of dish.

Dip one piece of chicken into the egg and then roll in the coat and cook.  Gently shake to remove excess coat and cook. 

Place in oven dish.

Continue process until all chicken pieces covered. 

Use left hand for egg and right hand for coat and cook and you won’t get too messy.

Once all chicken pieces are in oven tray, drizzle coke over ensuring all pieces are damp.  The bottom of the dish should be covered with approx 1cm of coke.

Bake at 150°C for 2 hours.

Chicken needs to be cooked slowly so not to burn the coke off.


LASAGNE

250g instant lasagne sheets           1 courgette

250g lasagne pieces                      1 small carrot

800g can chopped tomatoes           1 small onion

700g mince                                   6 button mushrooms

1t dried oregano leaves                   1t dried basil leaves 

Cheese Sauce

2T butter                                          2 cups milk

2T flour                                            1 cup grated cheese

Preheat oven to 180°C.

Spray dish with Sunfield Oils – Canola Cooking Spray. 

Place one layer of lasagne sheets in dish.  Put to one side.

Meat

Place mince in fry pan and break up any lumps as it cooks.  When it is browned drain off fat. 

Place courgette, carrot, onion and mushrooms in Breville mini wizz and chop.  Add to mince. 

Add tin of tomatoes and oregano and basil. 

Reduce heat and simmer.

Cheese Sauce

Melt 2T butter in a large microwave safe jug.

Add enough flour to make into a stiff paste.

Whilst constantly stirring, add 2 cups of milk.

Microwave on high for two minutes.  Stir well.

Microwave on high for one minute.  Stir well.

Repeat this process until thick.  Whisk well for smooth consistency.

Add 1 cup of grated cheese and stir well.

Divide mince mixture in half.  Place half on top of lasagne sheets.  Top with 1/3 cheese sauce mixture.

Place another layer of lasagne sheets.  Pour the remaining mince mixture and top with another 1/3 of cheese sauce mixture.

Place a layer of lasagne pieces and pour over remaining cheese sauce.

Bake for 1 ½ hours.

The lasagne sheets and pieces will do at least two lasagnes.


EASY PAVLOVA

4 egg whites            1t vanilla essence

1 ¼ cup sugar          1T cornflour

1t vinegar

Whipped cream                Seasonal fruits

Preheat oven to 180°C

Beat egg whites and sugar in a clean mixer bowl on maximum speed for 10 minutes until thick and stiff peaks form.

In a small jug mix vinegar, vanilla and cornflour together

Beat into egg white mixture and continue beating for a further 4 minutes or until mixture is thick and glossy.

Time the beating as this is crucial to the success.

Place a sheet of baking paper on an oven tray and mark out a 20cm diameter circle.

Spoon pavlova mixture to within 2cm from circle edge.

Place pavlova in preheated oven then reduce temperature to 100°C.

Bake for 1 hour

Turn oven off and leave pavlova to cool in oven

Serve with whipped cream and decorate with seasonal fruits.
