Chocolate Brownies

125 g butter

1/2 cups flour

1/4 cup cocoa

1/2 teaspoon baking powder

1 cup sugar

1/2 cup coconut

2 eggs

1 teaspoon vanilla essence

icing sugar to dust

1.   You will need a 20 cm shallow baking tin. Make sure that it is greased and line with baking paper. Heat your oven to 180 C.

Safety Hint:  Remind your children to wash their hands. 20 seconds to wash and 20 seconds to dry, before they start to cook.

2.   Place butter in a medium saucepan and stir over a low heat until melted. Add the cocoa and stir over low heat for one minute. Remove the saucepan from the element.

3.  Add in the sugar an stir. Add each egg, one at a time, beat well after each egg. Add in essence and coconut and beat well.

4.  Sift flour and baking powder into a bowl. Add and stir in the flour into the chocolate mixture. Pour the mixture into the baking tin and bake for 30 minutes.

5.  Leave in the tin for five minutes, then turn onto a wire rack to cool. When it is cold you can cut into square and dust with a little icing sugar. This is very rich, so smaller squares are a better idea than large ones - that's if you want it to last!

Teach good habits:   Once the biscuits are in the oven, get your kids to clean up the baking ingredients and dishes. Leave the kitchen tidy and enjoy your cooking.
